- 2 cups long-grain parboiled rice
- 1/4 cup vegetable oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 4 large tomatoes, blended
- 1 red bell pepper, blended
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 2 cups chicken broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Blend tomatoes and red bell pepper. Rinse rice in cold water and set aside.
