  • Sesame seeds
  • Chili oil or Sriracha (optional, for spice)

Instructions

  1. Prepare the Broth:
    1. In a large pot, heat the sesame oil over medium heat.
    2. Add the minced garlic and sliced ginger, sautéing until fragrant, about 2-3 minutes.
    3. Pour in the chicken or vegetable broth and water, then stir in the soy sauce and miso paste.
    4. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld together.
  2. Cook the Noodles:
    1. While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
  3. Prepare the Toppings:
    1. Soft-boil the eggs by placing them in a pot of boiling water for 6-7 minutes. Transfer to an ice bath, let cool, then peel and slice in half.
    2. Prepare the protein (chicken, pork, or tofu) by cooking and slicing into bite-sized pieces.
    3. Sauté the mushrooms in a bit of oil until tender.
    4. Blanch the spinach or bok choy in boiling water for 1-2 minutes, then drain.
  4. Assemble the Ramen:
    1. Divide the cooked noodles into two bowls.
    2. Pour the hot broth over the noodles.
    3. Arrange the toppings on top of the noodles: soft-boiled eggs, sliced protein, sautéed mushrooms, spinach or bok choy, corn kernels, and green onions.
    4. Garnish with nori strips and sesame seeds.
    5. Add chili oil or Sriracha for an extra kick of spice, if desired.
