- 2 soft-boiled eggs
- 1 cup cooked chicken, pork, or tofu (sliced)
- 1 cup sliced mushrooms
- 1 cup spinach or bok choy
- 1/2 cup corn kernels
- 2 green onions, chopped
- Nori sheets, cut into strips
- Sesame seeds
- Chili oil or Sriracha (optional, for spice)
Instructions
- Prepare the Broth:
- In a large pot, heat the sesame oil over medium heat.
- Add the minced garlic and sliced ginger, sautéing until fragrant, about 2-3 minutes.
- Pour in the chicken or vegetable broth and water, then stir in the soy sauce and miso paste.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld together.
- Cook the Noodles:
- While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
- Prepare the Toppings:
- Soft-boil the eggs by placing them in a pot of boiling water for 6-7 minutes. Transfer to an ice bath, let cool, then peel and slice in half.
- Prepare the protein (chicken, pork, or tofu) by cooking and slicing into bite-sized pieces.
- Sauté the mushrooms in a bit of oil until tender.
- Blanch the spinach or bok choy in boiling water for 1-2 minutes, then drain.
- Assemble the Ramen:
- Divide the cooked noodles into two bowls.
- Pour the hot broth over the noodles.
